INGREDIENTS:
- 1 pack (200 g) pancake mix
- 1 cup ube halaya
- 1/2 cup butter
- 1 large egg
- 1/3 cup coconut milk
- 1/4 cup water
- 2 tbsp oil
- Butter, for serving
- Pancake syrup, for serving
HOW TO MAKE:
- In a large bowl, combine the ube halaya, egg, water, coconut milk, and oil.
- Whisk together until no large lumps remain and mixture is well combined.
- Add- in the pancake mix, and gently whisk in until mixed and thick then set aside.
- Preheat a nonstick frying pan over medium heat.
- Melt 1 tbsp of butter in the pan for every pancake.
- Drop the ube batter by the 1/3 cupful onto the middle of the pan and cook until the tops have bubbled up and the underside has browned.
- Flip and cook until the pancake springs back when pressed gently.
- Remove from pan, and transfer to a plate.
- Repeat with remaining pancake batter.
- Serve with butter and pancake syrup, if desired. Enjoy!
Note: Makes 8 pcs 6-inch pancakes.
