INGREDIENTS:
- 1 pork pata (from front leg)
- ¼ kg lean pork, cubed
- 2 tsp baking soda
- 250 g castañas (chestnuts), cooked and peeled
For the Marinade:
- ½ cup soy sauce
- ⅓ cup brown sugar
- 1 bay leaf
- 1 tsp cracked peppercorns
HOW TO COOK:
- Start by cleaning the pork pata.
- Place it in a bowl with the baking soda and fill with enough water to cover.
- Let to stand for a few minutes then rinse well to remove the baking soda and drain.
- Return the pata to the bowl and add- in the marinade.
- Let to stand for at least 2 hours.
- Transfer the pork and the marinade in a casserole. then add- in about 1 & ½ cups water.
- Heat and bring to a boil and then simmer till pork is tender for about 2 hours.
- Season to taste and add- in the castañas.
- Simmer for another 5 minutes. Transfer to a serving bowl and serve hot. Enjoy!
