Pata Con Castanas Recipe

INGREDIENTS:

  • 1 pork pata (from front leg)
  • ¼ kg lean pork, cubed
  • 2 tsp baking soda
  • 250 g castañas (chestnuts), cooked and peeled
For the Marinade:
  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 1 bay leaf
  • 1 tsp cracked peppercorns

HOW TO COOK:

  1. Start by cleaning the pork pata.
  2. Place it in a bowl with the baking soda and fill with enough water to cover.
  3. Let to stand for a few minutes then rinse well to remove the baking soda and drain.
  4. Return the pata to the bowl and add- in the marinade.
  5. Let to stand for at least 2 hours.
  6. Transfer the pork and the marinade in a casserole. then add- in about 1 & ½ cups water.
  7. Heat and bring to a boil and then simmer till pork is tender for about 2 hours.
  8. Season to taste and add- in the castañas.
  9. Simmer for another 5 minutes. Transfer to a serving bowl and serve hot. Enjoy!
