Easy Pork Afritada Recipe

INGREDIENTS:

  • 1 & ½ lbs pork, chopped
  • 1 big sized potato, cut into wedges
  • 1 big sized carrot, cut into wedges
  • 1 small red bell pepper, sliced
  • 1 small green bell pepper, sliced
  • 1 cup pork broth
  • 2 cups tomato sauce
  • ½ cup water
  • 3 pcs dried bay leaves
  • 1 tsp ground black pepper
  • 1 tsp garlic, minced
  • 1 cup onion, chopped
  • 2 tbsp cooking oil
  • Salt and pepper to taste

HOW TO COOK:

  1. Pour and heat the cooking oil in a pan.
  2. Sauté the garlic and onions.
  3. Add the pork and sauté for 5 minutes or until the outer parts are cooked.
  4. Add the bay leaves, beef broth, water, and tomato sauce.
  5. Stir and simmer for 30 to 40 minutes or until the pork is tender (you may add more water if needed).
  6. Put- in the potatoes and carrots cook for 5 to 8 minutes.
  7. Add the bell peppers and cook for 3 minutes.
  8. Add the salt and pepper, to taste.
  9. Remove from heat and transfer to a serving plate. Enjoy!
