INGREDIENTS:
- 1/3 cup shrimp, peeled and deveined
- 1/3 cup pork meat, sliced
- 1/4 cup okra, sliced
- 1/4 cup eggplant, sliced
- 1/4 cup sitaw, cut into 2″ long
- 1/4 cup ampalaya, sliced
- 1/4 cup squash, sliced
- 4 tbsp UFC tomato sauce
- 2 tbsp lime soda (Sprite or 7-Up)
- 2 tbsp beer
- 1 tbsp garlic, minced
- 2 tbsp onion, sliced
- 1 tbsp bagoong/ alamang
- 1 tbsp annatto oil (atsuete)
- 2 tbsp olive oil
HOW TO COOK:
- Blanch all the vegetables then set aside.
- Boil the pork meat in a small amount of water until tender then set aside.
- In a cooking pan, saute the garlic and onion in olive oil.
- Add the boiled pork, shrimps and bagoong and stir constantly.
- Add the tomato sauce, then the blanched vegetables.
- Bring to a boil.
- Add in the annatto oil, lime soda, and beer.
- Simmer for 2 minutes.
- Remove from heat and serve hot with steamed rice. Enjoy!
