INGREDIENTS:
- 3 tsp baking powder
- 6 cups all-purpose flour
- 250 g butter
- 1/2 cup sugar
- 2 eggs, beaten (add evaporated milk to make 1 and 3/4 cup mixture)
- cooking oil (for frying)
For the Glaze:
- 1 cup sugar
- 4 tbsp water
- 1 tsp syrup
HOW TO COOK:
- Sift flour and baking powder together into a bowl.
- In another bowl, cream the butter then add the sugar.
- Add the egg-milk mixture alternately to the flour-baking powder mixture. Knead well.
- Form dough into thumb-size ovals and press with fork tines to mold into gorgoria shaped pieces.
- Heat cooking oil and fry gorgorias until golden brown.
For the Glaze:
- Make the glaze by boiling together sugar, water, and syrup until thickened or it reaches the ‘thread’ stage (when the mixture forms a thread when a fork is dipped into the mixture when lifted). It’s a bit tricky to coat the gorgorias if the consistency is too thick.
- Pour glaze into gorgorias until well coated. Do this quickly since the glaze will crystallize immediately.
