INGREDIENTS:
- 400 g santol, peeled, seeded, and finely chopped
- 250 g pork, cubed
- 1/2 cup fresh alamang
- 1 & 1/2 cup pure coconut milk
- 1/2 cup coconut cream (optional)
- 2 pcs shrimp broth cubes
- 2 tbsp garlic, crushed
- 1/2 cup onion, sliced
- 1 tbsp cooking oil
- 3 pcs chili, chopped (for topping)
HOW TO COOK:
- Start by soaking the chopped santol in salted water for at least 30 minutes.
- Drain santol and squeeze dry. Set aside.
- Pour and heat the cooking oil in a pan.
- Saute the garlic and onion until limp.
- Stir- in the alamang, pork, and shrimp broth cubes.
- Cook for 3 minutes or until pork and alamang changes color.
- Add- in the santol and cook for 5 minutes.
- Pour- in the coconut milk.
- Simmer over low heat for 15 minutes or until almost dry.
- Pour- in the coconut cream (optional).
- Continue cooking until santol is soft.
- Top with chili. Serve and enjoy!
