INGREDIENTS:
- 3 cups leftover white rice
- 1 cup canned corned beef
- 1 raw egg, beaten
- 1 tsp garlic, minced
- Dash of salt
- 3 tbsp cooking oil
- 3 eggs, cooked sunny side up (for optional topping)
HOW TO COOK:
- In a wide pan, pour- in the cooking oil and heat.
- When the oil is hot enough, add- in the raw beaten egg.
- Cook one side for 1 minute in medium heat.
- Turn the egg over and cook the other side for another minute.
- Remove the egg and set aside on a clean plate (reserve oil in pan).
- In the same pan, brown the minced garlic.
- Add- in the corned beef and cook for 2 minutes.
- Add- in the rice and stir- fry for 5 minutes.
- Add- in the cooked egg and manually break into smaller pieces while cooking.
- Add a dash of salt and then continue to stir- fry for more 2 minutes.
- Remove from heat and transfer to plates.
- Top the fried tice with the sunny side up eggs. Enjoy!
