INGREDIENTS:
- 1 kg chicken thigh, cut into serving pieces
- 1 & ½ cup chicken broth
- 1 can (400 g) diced tomatoes
- 1 & ½ cup frozen green peas
- 1 medium roasted red bell pepper, sliced
- 1 medium yellow onion, diced
- 4 cloves garlic, crushed
- Salt and pepper, to taste
- 3 tbsp cooking oil
HOW TO COOK:
- In a cooking pot, pour- in the cooking oil and heat.
- Once the oil is hot, saute the garlic and onion until the onion becomes soft.
- Add- in the chicken slices.
- Cook each side of the chicken until it turns light brown.
- Add- in the diced tomatoes and the chicken broth then stir and let it boil.
- Cover and simmer for 30 to 40 minutes.
- Add- in the green peas then stir and cook for 3 minutes.
- Add -in the red bell pepper then stir and cook for another 3 minutes.
- Add salt and pepper to taste.
- Remove from heat and transfer to a serving plate. Enjoy!
