BBQ Pork Belly Recipe

INGREDIENTS:

  • 1 kg pork belly (liempo), sliced about ¾ inch thick
  • ⅓ cup soy sauce
  • ½ cup brown sugar
  • 4 cloves garlic, finely minced
  • 1 tsp salt
  • 1 tsp peppercorn, crushed
  • 1 tsp chili flakes (optional)

HOW TO COOK:

  1. Make the marinade by combining all the ingredients (except pork belly) in a big bowl.
  2. Mix well until sugar is dissolved.
  3. Dip each piece of sliced pork belly, covering all sides completely, then place them in a plastic freezer bag.
  4. Seal and place in the refrigerator.
  5. Let it marinate for a few hours or overnight.
  6. Arrange the marinated pork belly slices on a grill rack and place it on the middle rack of the oven with a baking pan placed below it to catch the drippings.
  7. Bake the each side at 350 F or 180 C for about 20 to 30 minutes while basting the meat with the remaining marinade every 10 minutes.
  8. Remove from oven and transfer to a serving plate. Enjoy!
