INGREDIENTS:
- 1 kg pork belly (liempo), sliced about ¾ inch thick
- ⅓ cup soy sauce
- ½ cup brown sugar
- 4 cloves garlic, finely minced
- 1 tsp salt
- 1 tsp peppercorn, crushed
- 1 tsp chili flakes (optional)
HOW TO COOK:
- Make the marinade by combining all the ingredients (except pork belly) in a big bowl.
- Mix well until sugar is dissolved.
- Dip each piece of sliced pork belly, covering all sides completely, then place them in a plastic freezer bag.
- Seal and place in the refrigerator.
- Let it marinate for a few hours or overnight.
- Arrange the marinated pork belly slices on a grill rack and place it on the middle rack of the oven with a baking pan placed below it to catch the drippings.
- Bake the each side at 350 F or 180 C for about 20 to 30 minutes while basting the meat with the remaining marinade every 10 minutes.
- Remove from oven and transfer to a serving plate. Enjoy!
