INGREDIENTS:
- 1 cup cooked rice
- 2 cups milk, scalded
- 1 tbsp butter, sliced
- 3 eggs, well beaten
- 1/2 cup sugar
- 1/4 tsp salt
- 1/4 cup raisins
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
HOW TO COOK:
- In a large mixing bowl, combine the eggs, sugar and salt.
- Stir- in the hot milk slowly.
- Add- in the cooked rice, raisins, and vanilla.
- Pour into a buttered 1 ½- quart baking dish.
- Set in a pan of hot water.
- Bake for 30 minutes in 325 F or 160 C oven then stir.
- Sprinkle with cinnamon and dot with butter.
- Continue baking for 60 to 70 minutes or until set.
- Remove from the oven and serve. Enjoy!
