Baked Rice Custard Recipe

INGREDIENTS:

  • 1 cup cooked rice
  • 2 cups milk, scalded
  • 1 tbsp butter, sliced
  • 3 eggs, well beaten
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/4 cup raisins
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

HOW TO COOK:

  1. In a large mixing bowl, combine the eggs, sugar and salt.
  2. Stir- in the hot milk slowly.
  3. Add- in the cooked rice, raisins, and vanilla.
  4. Pour into a buttered 1 ½- quart baking dish.
  5. Set in a pan of hot water.
  6. Bake for 30 minutes in 325 F or 160 C oven then stir.
  7. Sprinkle with cinnamon and dot with butter.
  8. Continue baking for 60 to 70 minutes or until set.
  9. Remove from the oven and serve. Enjoy!
