Adobo Pampango Recipe

INGREDIENTS:

  • 1 kg pork belly (use big chunks)
  • l white vinegar
  • cups water
  • 300 g crushed garlic
  • 3 pcs white onion puree
  • 5 pcs bay leaves
  • 1 tsp salt
  • 10 g black peppercorn

HOW TO COOK:

  1. Mix all the ingredients in a large bowl and marinate overnight.
  2. Place it on large pot then boil for 10 minutes and simmer for 1 hour or until tender.
  3. Remove oil from adobo fat, and fry skin of adobo belly chunks into adobo oil until golden brown.
  4. Toss again into remaining sauce.
  5. Remove from heat and transfer to a serving plate immediately. Enjoy!
