INGREDIENTS:
- 1 pc pork pata or pork hock
- 2 cups pineapple chunks
- 3 cups pineapple juice
- ¼ cup brown sugar
- 1 pc white onion, chopped
- 4 cloves garlic, minced
- ¼ cup soy sauce
- 2 cups water
- 3 pcs dried bay leaves
- 1 tsp salt
- 1 tsp peppercorns
- 2 tbsp cooking oil
HOW TO COOK:
- Pour and heat the cooking oil in a deep cooking pot.
- When the oil is hot enough, sauté the onion and garlic until onion becomes translucent.
- Add- in the peppercorns.
- Add- in the pork pata and cook on all sides for 5 minutes.
- Pour- in pineapple juice and water then let it boil.
- Add- in the soy sauce and bay leaves.
- Cover and simmer for 60 to 90 minutes until very tender (add water if necessary).
- Stir in the brown sugar, salt, and pineapple chunks.
- Simmer until sauce thickens.
- Remove from heat and transfer to a serving plate. Enjoy!
