Easy Sampayna (Northern Mindanao Dinuguan) Recipe

Sampayna Recipe

INGREDIENTS:

  • 1 cup vinegar (mixed with 2 cups pork blood)
  • 1 cup pork small intestines, cleaned, boiled, and cut crosswise (in 1 cm lengths)
  • 1 cup pork lungs, cleaned, boiled, and cut into small cubes
  • ½ cup pork liver, cleaned, boiled, and cut into small cubes
  • 2 tsp slice tomatoes
  • 2 cups sliced banana heart
  • 1 tsp crushed garlic
  • 2 tsp sliced onion
  • 1 tsp sliced ginger
  • 2 & ½ tsp salt
  • ½ cup olasiman stems and leaves (optional)
  • 2 tbsp cooking oil (or fat)

HOW TO COOK:

  1. In a pot, boil the pork intestines and lungs until tender or for about 30 minutes.
  2. In another pot, sauté the garlic, onion, ginger, and tomatoes.
  3. Add- in the intestines, lungs, liver, and banana heart.
  4. Add- in the well- mixed vinegar and blood mixture and bring to a boil without stirring for about 15 minutes.
  5. Add- in salt then stir and add the olasiman.
  6. Cook 5 minutes longer. Transfer to a serving bowl and serve hot. Enjoy!
