INGREDIENTS:
- 2 lbs lengua
- 1 cup sliced button mushrooms
- ¾ cups whipping cream
- 1 can (10.5 oz) condensed cream of mushroom
- 3 cups beef broth
- 6 cups water (for boiling the lengua)
- 1 large yellow onion, chopped
- 5 cloves garlic, crushed
- Salt, to taste
- Ground black pepper, to taste
- 3 tbsp cooking oil
HOW TO COOK:
- Pour the water in a pressure cooker and let it boil.
- Add- in the lengua.
- Cover the cooker and pressure cook for 35 to 40 minutes or until tender.
- Remove lengua from the pressure cooker and let it cool down.
- Peel the outer layer of the lengua and slice into thin pieces.
- Pour and heat the cooking oil in a pot.
- Saute the onion and garlic.
- Add- in the sliced lengua and cook for 2 minutes.
- Pour- in the condensed cream of mushroom and beef broth in the pot.
- Stir and let it boil.
- Cover and simmer for 35 minutes.
- Add- in the sliced mushrooms and whipping cream.
- Continue to cook for 40 minutes in low heat or until the liquid reduces to half and the sauce starts to thicken.
- Add the salt and ground black pepper to taste.
- Transfer to a serving plate. Enjoy!
