Pancit Bato Guisado Recipe

INGREDIENTS:

  • ¾ lb Pancit Bato (Bicolano pancit)
  • 6 oz sliced pork
  • 6 oz medium shrimp, shell and head removed
  • 2 cups cabbage, chopped
  • 1 medium carrot, julienned
  • 1 cup snap peas
  • 2 cups chicken broth
  • ¼ cup soy sauce
  • 2 tbsp patis
  • 1 medium onion, sliced
  • 2 tsp garlic, minced
  • Ground black pepper, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat the cooking oil in a cooking pot or deep pan.
  2. Once the oil is hot, saute the garlic and onion.
  3. Add the sliced pork and cook for 3 minutes.
  4. Pour- in the soy sauce, fish sauce, and chicken broth and let it boil.
  5. Simmer covered for 20 minutes (add water if needed).
  6. Add the ground black pepper and stir.
  7. Put- in the shrimp, snap peas, and carrots and cook for a minute.
  8. Add the cabbage and cook for 2 minutes.
  9. Put- in the Pancit Bato.
  10. Stir and cook until all the liquid is absorbed (the noodles should be soft, if not, add a little water to soften).
  11. Remove from heat and transfer to a serving plate. Enjoy!
