Easy No Bake Blueberry Cheesecake Recipe

Blueberry Cheesecakes are one of the most popular cheesecakes in the world! In fact, in our country, a lot of bakeshops, pastry shops, coffee shops, and restaurants, have this in their menu.

Why not, it is how I would describe as a ‘perfect combination of sweetness and saltiness’ and we just couldn’t get enough of it.

I love it with my coffee and I can have it as a dessert after any meal. I know you want one too. Good news! It is no trouble to make these right at home! You can even do this even if it is your first time to make a cake.

No baking experience or know-how is needed, and you don’t even need to use an oven! This recipe makes use of gelatin to make the cake intact. Excited? Learn how to make blueberry cheesecake now:

INGREDIENTS:

  • 1 cup crushed Graham crackers
  • 2 tbsp butter (unsalted)
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 3 tbsp water
  • 2 (8 oz) pack cream cheese
  • 1 tsp vanilla extract
  • 2 cups whipped cream
  • 1 tsp unflavored colorless gelatin
  • 1 jar of blueberry preserves

HOW TO MAKE:

For the Crust:

  1. Combine Grahams, butter, and brown sugar with a fork until well blended.
  2. Press in a 9 inch pie pan.
  3. Chill in the fridge for about 15 minutes.

For the Filling:

  1. Beat the cream cheese and sugar in a bowl with mixer. Add in vanilla extract.
  2. Dissolve the gelatin in the water and add in the cream cheese mixture. Beat until well blended and fluffy.
  3. Fold in the whip cream.
  4. Scoop filling over the crust and let chill in the fridge for about 3 hours or until set.
  5. Top with the blueberry preserves. Enjoy!
