INGREDIENTS:
For the Bibingka:
- 1 tbsp baking powder
- Banana Leaves
- 1/2 cup Butter
- 3 eggs
- 1½ cup coconut milk
- 2 cups rice flour
- 1 cup rice malagkit flour
- 1 cup sugar
For the Yema:
- 5 pc egg yolks
- 1 can condensed milk
- 2 tbsp lime juice
- salt
HOW TO MAKE:
- Preheat the oven. Brush banana leaves with butter.
- In a bowl, beat the eggs and add- in the butter. Mix until the butter melts. Add- in the coconut milk and mix thoroughly.
- In another bowl, mix together the rice flour, rice malagkit flour, sugar and baking powder.
- Combine the wet and dry ingredients together and mix.
- Bake for 25 minutes or when a toothpick inserted comes out clean.
- Cook the yema and place on top of the bibingka.
