INGREDIENTS:
- 1 & ½ cups spinach or alugbati
- 1 & ½ cup squash, cubed
- 1 to 2 cups string beans, cut into 2 inch length
- 1 cup patola, sliced
- 1 medium eggplant, sliced
- 10 pcs okra
- 1 medium tomato, wedged
- 1 cup malunggay leaves
- 2 thumbs ginger, sliced
- 5 scallions, sliced
- 2 siling haba
- salt, to taste
- 2 cups water
- 2 slices baked fish fillet, or any type of fish (optional)
HOW TO COOK:
- In a pot, pour- in the water and bring it to a boil.
- Add- in the ginger and squash and continue to boil for 8 minutes while covered.
- Stir-in the string beans, scallions, okra, and tomato.
- Let the liquid re- boil then add the siling haba and the eggplant.
- Stir and add the fish (optional).
- Cover and cook for 10 minutes.
- Add- in the patola and malunggay leaves then cover and cook for 3 to 5 minutes.
- Add- in the spinach and add some salt to taste.
- Remove from heat and transfer to a serving bowl. Enjoy!
