INGREDIENTS:
For the Coconut Milk Layer:
- 1 can (400 ml) coconut milk
- 3 tbsp sweet corn kernels, drained
- ½ cup corn starch
- ½ cup sugar
- 1 tsp vanilla extract
For the Ube Layer:
- 1 tsp ube extract
- 1 can (400 ml) coconut milk
- 3 tbsp sweet corn kernels, drained
- ½ cup corn starch
- ½ cup sugar
For the Topping:
- ¼ cup grated cheese
HOW TO COOK:
- Prepare an 8 × 8- inch pan by lightly greasing it with oil. Set aside.
For the Coconut Milk Layer:
- Combine all the ingredients in a sauce pan.
- Stir well to dissolve the sugar and corn starch.
- Apply medium heat and bring the mixture to a boil.
- Stir continuously until it reaches a sticky consistency. Transfer to the pan.
For the Ube Layer:
- Using the same sauce pan, combine all the ingredients and stir well to dissolve the sugar and corn starch.
- Bring to a boil over medium heat, stir continuously until you reach the same consistency with the coconut milk layer.
Assembly:
- Pour the Ube mixture on top of the coconut mixture.
- Spread and flatten evenly as possible.
- Top with grated cheese.
- Set aside and let it cool at room temperature.
- Serve and enjoy!
