INGREDIENTS:
- 1 cup Pili nuts, pounded
- 2 cups kamote, mashed
- 2 cups coconut milk
- 1 egg, well beaten
- 2 cups refined sugar
- 1 tsp vanilla extract
HOW TO COOK:
- In a sauce pan or casserole, mix the mashed kamote with the other ingredients.
- Cook over low heat, stirring constantly to prevent scorching, until the consistency is thick.
- Remove from the fire and place the mixture on a greased board.
- Flatten with a rolling pin to about 1/2 inch thick.
- Cut into desired sizes and shapes.
- Allow to cool. Consume or store in a glass jar. Enjoy!
