INGREDIENTS:
- 3 pcs cucumbers, peeled and sliced
- 150 g lean pork, minced
- 150 g fatty pork, minced
- 1 tsp chili flakes
- 6 cloves garlic, minced
- Sea salt, to taste
- Peanut oil, for cooking
For the Sauce:
- 2 tbsp water
- 2 tsp cornstarch
- 2 tsp soy sauce
- 1 tsp patis
- 1 tbsp Chinese cooking wine
- 1 tbsp toasted sesame oil
HOW TO COOK:
- In a large bowl, place the cucumbers and generously sprinkle salt all over it.
- Mix and toss then set aside for 15 minutes.
- Rinse the cucumber in running cold water and remove excess salt, drain in a colander then set it aside.
- Pour and heat the peanut oil in a large wok.
- Whe hot enough, sauté the garlic and chilli flakes for 30 seconds then add the lean pork mince, fatty pork mince and a bit of salt.
- Stir fry until light brown in color.
- Remove the pork from the wok then set aside and wipe the wok clean.
- Place the wok back into your stove, heat peanut oil in high heat until it smokes then add the cucumbers and stir fry for 2 minutes.
- Add the pork then stir fry for one more minute.
For the Sauce:
- Mix all sauce ingredients in a small bowl.
- Pour the sauce in the wok then stir fry until sauce thickens.
- Remove from heat and transfer to a serving plate. Enjoy!
