Spicy Bopis Recipe

INGREDIENTS:

  • 1 & ½ lbs pig’s heart, boiled until tender and diced
  • 1 medium red bell pepper, diced
  • 1 medium carrots, diced
  • ½ cup annatto seeds, diluted in ¼ cup water
  • ¾ cup vinegar
  • 2 cups water
  • 2 & ½ tbsp crushed red pepper
  • 1½ tbsp ginger, minced
  • 1 medium red onion, chopped
  • 4 cloves garlic, minced
  • 4 pcs dried bay leaves
  • Salt and pepper, to taste
  • 2 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat the cooking oil in a pan.
  2. Saute the garlic, onion, and ginger.
  3. Add- in the pig’s heart and cook for 5 minutes.
  4. Add- in the crushed pepper and annatto water then stir.
  5. Add- in the dried bay leaves and pour- in the water.
  6. Let it boil then simmer for 5 minutes.
  7. Pour- in the vinegar and allow to reboil then stir.
  8. Add- in the carrots, red bell pepper, salt, and pepper.
  9. Cook for 3 minutes.
  10. Remove from heat and transfer to a serving plate. Enjoy!
