INGREDIENTS:
- 60 g all purpose flour
- 3/4 tsp baking powder
- 5 pcs egg yolks (reserve egg whites)
- 40 g granulated white sugar
- Pinch of salt
- 1 tsp vanilla extract
For the Meringue:
- 5 pcs egg whites
- 2 tbsp white sugar
HOW TO MAKE:
- Combine the egg yolks and 40 g white sugar in a large mixing bowl and mix well.
- In a separate mixing bowl, sift the all-purpose flour and baking powder then add them into the egg yolk mixture.
- Add- in the salt and vanilla extract then mix until smooth. Set aside.
For the Meringue:
- Place the egg whites in a mixing bowl then whisk using a hand mixer.
- When small bubbles starts to appear, add- in 2 tbsp sugar.
- Whisk again until stiff peaks appear.
- Put 1/3 of the meringue to the first mixture and mix.
- Repeat this process three times but for the second and last batch you need to use spatula to mix it.
- Continue mixing by cutting and folding until smooth and thick texture appear.
- Heat a non-stick pan with a low flame.
- Using a paper towel, grease the pan with little butter (don’t put too much butter because this will affect the texture of the pancake).
- Put 1/2 cup of the pancake batter.
- Cover and cook for 2 to 3 minutes.
- Put another 1/4 cup of batter to top.
- Flip and cook for another 2 to 3 minutes.
- Transfer pancakes to a serving plate. Enjoy!
