INGREDIENTS:
- 1 cup all- purpose flour
- 3 tsp baking powder
- 1 tbsp unsweetened cocoa powder
- 1 & 1/2 tbsp sugar
- 1 cup powdered sugar, plus extra for dusting
- 2 tbsp butter, melted, plus more to cook
- Salt, to taste
- 1 pack 8 oz cream cheese, at room temperature
- 1/4 cup whole milk
- 1 large egg, beaten
- 3/4 cup buttermilk
- 1 tsp vanilla extract
- 2 tbsp red food coloring
- Semi-sweet chocolate chips (for garnish)
- Toasted almonds (for garnish)
HOW TO MAKE:
- In a large mixing bowl, sift together the flour, baking powder, cocoa powder, salt, and sugar.
- Add- in the egg, buttermilk, butter, and food coloring then mix together until combined.
- In a pan, melt the butter medium-low heat.
- Pour ¼ cup of the batter onto the center and swirl pan to form a circle.
- Cook for 30 seconds then top with chocolate chips, if using.
- Cook until bubbles appear on the surface, about 30 seconds more.
- Flip and cook for 1 minute. Set aside. Repeat with remaining batter.
For the Cream Cheese Frosting:
- Whisk cream cheese in a bowl.
- Whisk in sugar, vanilla, and milk until smooth.
- Top pancakes with cream cheese frosting.
- Sprinkle with almonds and dust with confectioners’ sugar, if desired.
