Pork Pata Humba Recipe

INGREDIENTS:

  • 2 lbs pork pata, sliced
  • ¼ cup tausi (salted black beans)
  • ½ cup dried banana blossoms
  • 4 cups pineapple juice
  • ½ cup soy sauce
  • 1 tsp vinegar
  • 6 cups water
  • 1 pc pork cube
  • ¼ cup dark brown sugar
  • 1 medium yellow onion
  • 4 cloves garlic, crushed
  • 3 pcs dried bay leaves
  • ½ tsp crushed peppercorn
  • 3 tbsp cooking oil

HOW TO COOK:

  1. Pour the water into a cooking pot, heat, and let it boil.
  2. Add- in the pork pata.
  3. Make sure to scoop out the scums that will eventually float.
  4. Cover and boil in medium heat for 40 to 60 minutes (add more water if needed).
  5. Remove the pata from the cooking pot and set it aside and discard the water.
  6. Pour the cooking oil into a clean cooking pot and heat.
  7. Once the oil gets hot, saute the garlic and onion.
  8. Add- in the boiled pata then stir and cook for 1 minute.
  9. Pour- in the soy sauce and pineapple juice into the pot then let it boil.
  10. Add- in the pork cube then stir.
  11. Add- in the dried bay leaves, cracked peppercorns, dried banana blossoms, and tausi then stir.
  12. Cover and continue to cook between low to medium heat until the liquid reduces to half.
  13. Add- in the vinegar then stir.
  14. Add- in the dark brown sugar then continue to cook for 5 minutes.
  15. Remove form heat and transfer to a serving bowl. Enjoy!
