Poqui Poqui Recipe

INGREDIENTS:

  • 2 large eggplants
  • 4 eggs, beaten
  • 2 large tomatoes, chopped
  • 1 small onion, peeled and sliced thinly
  • 2 cloves garlic, peeled and sliced
  • 2 tbsp oil
  • Salt and pepper, to taste

HOW TO COOK:

  1. Grill the eggplants until skins are charred (you can use charcoal or gas stove).
  2. Remove from heat and peel the skin under running water.
  3. Rinse well and coarsely chop the eggplant flesh. Set aside.
  4. Heat the oil in a skillet, over medium heat.
  5. Add the onions and garlic and cook until aromatic.
  6. Add the tomatoes and continue to cook.
  7. Mash the tomatoes (with back of the spoon), until softened.
  8. Add the chopped eggplant flesh.
  9. Season with salt and pepper to taste.
  10. Add the beaten eggs and stir to combine.
  11. Cook until eggs are just set. Remove from heat and serve. Enjoy!
