Pineapple Fried Chicken Recipe

INGREDIENTS:

  • 3 lbs whole chicken, cut into serving pieces
  • 1 can (20 oz) crushed pineapples
  • 2 large eggs, beaten
  • 1 cup all- purpose flour
  • 1 cup Sprite or 7-Up
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 3 tsp salt
  • 1 tsp ground black pepper
  • Additional salt and pepper for rubbing
  • 2 cups cooking oil

HOW TO COOK:

  1. Combine and stir together the crushed pineapple, Sprite or 7-Up, soy sauce, 3 tsp salt, 1 tsp ground black pepper in a large container.
  2. Add- in the chicken pieces to the mixture and, refridgerate, then marinate overnight.
  3. In a bowl, combine the flour and garlic powder then set aside.
  4. Separate the chicken from the marinade then let the excess liquid drip.
  5. Pour and heat the cooking oil in a frying pan.
  6. Rub some salt and pepper all over the chicken pieces.
  7. Dip each piece in the egg mixture.
  8. Dredge the egg coated chicken in the flour mixture.
  9. Fry each chicken piece in low to medium heat for about 8 to 12 minutes per side (add more time depending on the thickness of the chicken).
  10. Remove the cooked chicken pieces from the pan.
  11. Arrange in a plate lined with paper towels. Serve and enjoy!
