INGREDIENTS:
- 1 pack (16 oz) grated ube (or equivalent amount of powdered ube)
- 1 can (14 oz) condensed milk
- 1 cup powdered milk (Nido or Bear Brand)
- ½ cup sugar (for coating)
- zest of 1 lime
HOW TO COOK:
- In a skillet, combine and mix grated ube (or prepared ube powder) and condensed milk.
- Cook over medium low heat.
- Stir regularly for about 8 to 10 minutes or until the mixture thickened.
- Add powdered milk and lime zest and stir to combine.
- Continue to cook until the mixture can be pulled away from pan in one soft ball.
- When it does, remove from heat and allow to cool.
- Transfer to a flat surface.
- Using a teaspoon, divide mixture and shape each portion into mini logs (about 1 inch long) or into balls.
- Roll pastillas in sugar until fully coated.
- Wrap each piece in wax paper or cellophane. Enjoy!
