INGREDIENTS:
- 1 pc tilapia, scales and innards removed
- ¾ cup cooking wine (sherry or shaoxing)
- ¼ cup cornstarch
- ½ cup all- purpose flour
- 1 tsp garlic powder
- 1 tbsp coarse sea salt
- ½ tsp ground black pepper
- 1 & ½ cups cooking oil
HOW TO COOK:
- Prepare the tilapia by seasoning both sides with salt, ground black pepper, and garlic powder.
- Make sure to rub all over the fish including the cavity.
- Arrange the tilapia in a deep plate.
- Pour the cooking wine over the tilapia and marinate each side for 15 minutes.
- Combine the cornstarch and flour in a resealable bag and shake well.
- Put the marinated tilapia in the bag and shake until it is coated with the flour and cornstarch mixture. Set aside.
- In a cooking pan, start heating the cooking oil.
- Once the cooking oil gets hot, gently fry one side of the tilapia in medium heat until it turns golden brown and crisp.
- Turn the fish over to cook the opposite side.
- Remove the tilapia from the pan and put in a plate lined with paper towel. Enjoy!
