INGREDIENTS:
- 5 fresh mangoes
- 1/4 cup small sago (tapioca pearls), uncooked
- 2 cups water
- 1/2 cup evaporated milk
- 1/4 cup sugar
HOW TO MAKE:
- Pour the water in to a large pot and bring water to a boil over medium heat.
- Add the sago and cook, stirring regularly, for about 7 to 10 minutes.
- Turn off the heat and cover.
- Let the sago stand in hot water until translucent and cooked through.
- Rinse the cooked sago under cold running water to remove excess starch using a colander.
- Drain well and let them completely cool.
- Peel the mangoes and cut the flesh from pits.
- Cube the flesh of four of the mangoes.
- Dice the flesh of the remaining 1 mango and set aside to use as garnish.
- Combine the cubed mango flesh, evaporated milk, and sugar in a blender or food processor.
- Process until smooth and thick.
- Combine the mango puree and sago in a container.
- Chill in the refrigerator until ready to serve.
- Divide mango sago into serving bowls and garnish with diced mangoes. Enjoy!
