We all know about the Leche Flan, and why not, it is an all- time Filipino favorite when it comes to desserts. But have you considered making a healthier twist? With this Kalabasa Leche Flan recipe, you’d enjoy the sweet creamy custard while having the health benefits of squash!

INGREDIENTS:
- ¼ cup kalabasa (squash), boiled and mashed
- 6 egg yolks
- 2 eggs
- 1 box (250 ml) fresh milk or evaporated milk
- 1 can (218 g) condensed milk
- 1 tsp vanilla extract
For the Caramel:
- 10 tbsp sugar
- 4 tbsp water
HOW TO COOK:
- First, prepare the steamer by pouring 1 liter of water. Set on a medium heat and cover with lid.
- Prepare a 2 molds or llaneras.
- Make the caramel first by dividing the sugar and water on both llaneras.
- Heat llanera on a low fire one at a time until sugar starts to melt, dissolves and become syrupy.
- Turn off the heat when the caramel syrup turns light brown.
- Tilt the tin around to coat all sides and continue with the other llanera and set aside to cool.
- In a large bowl, combine the egg yolks, eggs, mashed kalabasa, then whisk together.
- Add the condensed milk, fresh or evaporated milk, and vanilla extract then continue whisking until combined.
- Use a strainer and a ladle to transfer kalabasa mixture into the prepared llaneras to get rid of lumpy bits.
- Place in the steamer and steam for about 30 minutes with a cloth under the lid (to catch water drippings and avoid flan from soggy).
- Insert a toothpick, if it comes out clean, your done.
- Remove from steamer and transfer on a wire rack and let it cool for 10 minutes.
- Refrigerate for 20 minutes before transferring to a plate.
- When transferring, loose edges with a knife first to avoid flan from breaking.
- Transfer by turning the flan upside down, with the caramel up top. Enjoy!
