INGREDIENTS:
- 1 cup (205 grams) squash or kalabasa, mashed
- 1 cup (120 grams or 4.25 oz) all-purpose flour
- ¾ cup (150 grams or 5.25 oz) white sugar
- ½ tsp (2.4 grams) baking soda
- 1 tsp (4 grams) baking powder
- 1 tsp (2.64 grams) cinnamon powder
- ½ cup (250 ml or 8 fl oz) light olive oil or pomace, or vegetable oil (don’t use extra virgin)
- 2 eggs
HOW TO MAKE:
- Preparing the Kalabasa:
-Cook Kalabasa in boiling water until soft. Once cooked, remove from water and let it cool.
-Mash the Kalabasa then set aside.
- Preparing the dry ingredients:
-In a bowl, mix the flour, sugar, baking soda and powder, and cinnamon together.
-Once it’s evenly mixed, set aside.
- Preparing the batter:
-In a large bowl, put in the mashed kalabasa, oil, and eggs, then mix it well.
-Add in the dry ingredient mixture, then continue to mix until everything is evenly incorporated.
- Baking:
-Prepare the baking pan of choice, then coat it with oil or butter and sprinkle it with flour. This is to prevent the bread from sticking to the pan.
-Pour in the batter evenly on the baking pan, then put it in a preheated oven at 175 degrees celsius and bake for about 50 minutes.
-You can do the toothpick test to check if the bread is done. Just poke the bread with a toothpick in the middle and if it comes out clean, it’s done.
- Serving:
-Remove the pan from the oven and let the bread cool off for about 15 minutes.
-Transfer the bread to a plate, then slice and serve.
