INGREDIENTS:
- 2 cups glutinous rice flour
- 1 cup coconut milk (gata)
- 1/2 cup fresh milk or evaporated milk
- 1 & 1/2 cup (1 can) condensed milk
- 1/4 cup butter
- 4 yolks of large eggs
- 1/2 box cheese (kraft eden cheese), grated
HOW TO MAKE:
- Start by melting the butter using a microwave or heating over a pan.
- Use 1/4 of the melted butter to grease the foil or pan where you will pour the bibingka mixture.
- Combine the glutinous rice flour, coconut milk, fresh milk, condensed milk, egg yolks, and the remaining melted butter in a large bowl.
- Mix the ingredients thoroughly until well-blended.
- Preheat the oven to 375 F or 190 C.
- While the oven starts to heat, pour the bibingka mixture into the greased baking pan and cover it with an aluminum foil.
- Place in oven and bake for 25 minutes.
- Remove the pan from the oven (the bibingka is now half baked), then sprinkle it with the grated cheese.
- Bake the bibingka again for another 25 to 30 minutes, this time uncovered.
- You’ll know it’s done when the top layer of the bibingka turns to light brown.
- Let it cool under room temperature then serve. Enjoy!
