INGREDIENTS:
- 1 lb chicken thigh (or breast), boneless & skinless, cut into 1 inch cubes
- 1 tbsp cornstarch
- 2 egg whites
- 1 tbsp Chinese cooking wine
- ¼ cup soy sauce
- green onions, chopped
- Oil, for frying
- Chopped green onions, for garnish (optional)
For the Honey Garlic Sauce:
- ½ cup honey
- 4 cloves garlic, peeled and grated
- Juice of 1 lime
- ¼ cup soy sauce
- 1 tsp Sriracha sauce
- Salt and pepper, to taste
HOW TO COOK:
- Combine the chicken, soy sauce and Chinese cooking wine in a bowl.
- Marinate in the refrigerator for about 20 to 30 minutes.
- Drain chicken and discard the liquid. Set aside.
- Combine the egg whites and cornstarch in a bowl.
- Whisk together until well- blended and frothy.
- Add- in the chicken and mix to fully coat.
- Pour about 2 to 3 inches deep oil in a deep pan then apply medium heat.
- Add- in the chicken pieces, one at time to prevent from lumping together.
- Deep- fry for about 5 to 6 minutes or until golden.
- Remove from heat using a slotted spoon and drain on paper towels.
- Cook chicken in batches, so you won’t overcrowd the pan.
For the Honey Garlic Sauce:
- Combine honey garlic sauce ingredients in a saucpan: honey, soy sauce, lime juice, garlic, Sriracha sauce, and salt and pepper to taste.
- Whisk together until well- blended.
- Apply medium heat then heat mixture until bubbly.
- Add- in the fried chicken and gently toss until coated with sauce.
- Remove from heat and garnish with chopped green onions, if desired. Enjoy!
