Sukang Pinakurat is a very popular version of spiced vinegar here in our country. It matches a lot of fried dishes so why not have your very own at home! See full recipe below:
INGREDIENTS:
- 740 ml Coconut Vinegar (25 oz fluid)
- 8 cloves Garlic, divided
- ¼ cups Ginger, sliced and divided
- 1 cup red chilis, divided (labuyo)
- 1 cup Patis (Fish Sauce)
- 2 teaspoons Onions, Sliced
HOW TO MAKE:
- Prepare a blender or a food processor.
- Add 1 cup of vinegar, 4 garlic cloves, ⅛ cup ginger, and ½ cup red chilis. Blend everything until it becomes a smooth texture.
- Pour in the remaining 2 cups vinegar and continue blending. Add in patis and blend it again. If patis is not available, you can substitute it with salt.
- Using a funnel, pour in mixture into a sterilized bottle (or any container). Then, add chopped onions and labuyo (or red chilis), ginger, and garlic.
- Serve or store for later.
