INGREDIENTS:
- 3 pcs eggplants, sliced lengthwise
- 500 g pork, minced
- 3 tbsp bagoong alamang
- 1 large tomato, chopped
- 4 cloves garlic, minced
- 1 red onion, chopped
- ½ cup water
- 3 tbsp cane vinegar
- 1 tsp sugar
- Freshly ground black pepper
- Cooking oil
HOW TO COOK:
- Pour and heat the oil in a wok.
- When oil gets hot enough, sauté garlic and onions.
- Add- in the minced pork and cook while continuously mixing until light brown in color.
- Add- in the tomatoes and continue to cook until tomatoes are soft.
- Add- in the eggplants, water, vinegar, sugar and bagoong alamang then bring to a boil then simmer in low heat for 5 minutes.
- Season with freshly ground black pepper
- Mix ingredients well then cook for 3 more minutes.
- Remove from heat then transfer to a serving plate. Enjoy!
