INGREDIENTS:
- 500 g cassava root, peeled, cleaned and cut into 2 inch sections
- 1 can coconut milk
- 150 g palm sugar
- ½ tsp salt
- water
HOW TO COOK:
- Put cut cassava in small pot and add enough water to cover the cassava.
- Heat the pot and bring it to a boil.
- Cook in medium heat until slightly tender (this will take about 10 minutes).
- Add the coconut milk and palm sugar then adjust the heat to high.
- Let it boil uncovered and continue to cook for 10 minutes (make sure not to overcook as the cassava will fall apart).
- Carefully remove the cassava and set them aside.
- Continue heating the liquid to further reduce the liquid to a thicker consistency.
- Serve the cassava by combining it with the thicker coconut cream sauce. Enjoy!
