INGREDIENTS:
- 4 pcs galunggong, cleaned and salted
- 4 pcs Serrano peppers (or siling haba, if not available)
- 3 cups coconut milk
- 1 tbsp fish sauce
- 1 knob ginger, sliced into strips
- 1 small red onion, sliced
- 2 cloves crushed garlic
- ½ tsp ground black pepper
HOW TO COOK:
- In a wide cooking pot, pour- in the coconut milk.
- Heat and let it boil.
- Add- in the garlic, ginger, onion, fish sauce, and ground black pepper.
- Stir and cover, then cook for 5 minutes.
- Arrange the galunggong and the pepper in the cooking pot.
- Cover and then continue cooking in medium heat for 30 minutes.
- Remove the cover and let the sauce reduce to about ½ to ¾ cups.
- Remove from heat and transfer to a serving plate. Enjoy!
