INGREDIENTS:
- 3 lbs chicken, cut into serving parts
- ½ cup brown sugar
- ½ cup soy sauce
- ¼ cup calamansi juice
- 1 head garlic, peeled and minced
- 1 tsp salt
- 1 tsp pepper
- ¼ cup oil
HOW TO COOK:
- First, wash the chicken and pat dry.
- Combine the soy sauce, calamansi juice, brown sugar, garlic, salt, and pepper in a large bowl.
- Stir well until sugar and salt are dissolved.
- Add- in the chicken and stir until it is fully coated with marinade.
- Cover and marinate in the refrigerator for at least 4 hours (or overnight for best results).
- Drain the chicken and bring to room temperature. Discard the marinade.
- Pour the oil in a wide, thick bottomed pan then apply medium heat.
- Add- in the chicken and cook for about 10 to 15 minutes on each side or until nicely browned on the outside (thermometer inserted in the center reads 165 F or 73 C).
- Alternate step: You can also grill over hot coals for about 10 to 15 minutes on each side. Enjoy!
