INGREDIENTS:
For the Dulce de Leche:
- 1/2 cup condensed milk
- 1 cup evaporated milk
- 1 pc egg yolk
- 1 tbsp cornstarch
- 1/2 tsp vanilla
- 1 tbsp butter
For the Cupcake:
- 1 cup all purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/4 cup fresh lemon juice with 1/4 cup water
HOW TO MAKE:
For the Dulce de Leche:
- In a saucepan, combine the condensed milk, evaporated milk, egg yolk, and cornstarch.
- Mix until the egg and cornstarch is well blended.
- Cook over medium heat, while stirring consistently, until mixture becomes thick around 20 to 30 minutes.
- Remove from heat and stir in vanilla and butter
- Let it cool down.
For the Cupcake:
- In a large mixing bowl, sift together flour, sugar, baking powder, baking soda and salt.
- Add- in the milk, egg, oil, and vanilla extract.
- Mix until all ingredients are well blended.
- Boil the lemon juice in a saucepan, remove from heat and immediately then beat into the batter.
- Fill cupcake liners until 3/4 full.
- Bake in preheated oven at 350 F or 175 C for 15 to 20 minutes.
- Remove from oven and let it cool.
- Top with the cooked dulce de leche and you can also drizzle with salted caramel sauce. Enjoy!
