INGREDIENTS:
- 2 tablespoons instant coffee granules
- 1 can (14 oz) sweetened condensed milk
- 2 cups evaporated milk
- 6 large eggs
- 2 tbsp water
- 1 tablespoon warm water
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 1/8 teaspoon salt
HOW TO COOK:
- Combine water and sugar in a bowl (microwave- safe).
- Stir well until sugar is completely dissolved.
- Microwave (high setting) for about 4 to 5 minutes or until color changes to honey gold.
- Quickly tranfer to ramekins or llaneras.
- Gently whisk the eggs (until there are no streaks of white) in a bowl.
- Add the condensed milk and stir until combined.
- Add evaporated milk and stir until well-combined.
- Using a fine mesh sieve or cheesecloth, strain mixture. Set aside.
- In a small bowl, combine coffee granules and warm water then stir until coffee is completely dissolved.
- Add the dissolved coffee, vanilla extract, and salt to the strained egg & milk mixture and stir until blended.
- Pour into the prepared ramekins or llaneras.
- Cover ramekins or llaneras with foil and arrange in a wide, oven- safe dish with about 1-inch of water (water bath).
- Bake in a 375 F or 190 C oven for about 40 to 50 minutes or until a toothpick inserted comes out clean.
- Remove from oven, allow to cool and refrigerate to set.
- To serve, turn flan over on a serving plate, ending with caramel on top. Enjoy!
