INGREDIENTS:
- 1 can (14 oz) coconut milk
- 1 can (14 oz) evaporated milk
- 1 can (12 oz) condensed milk
- 6 eggs
- 1 cup sugar
- ¼ cup water
- Coconut flakes for topping (optional)
HOW TO COOK:
- Combine the sugar and the water in a microwave- safe bowl.
- Stir well until sugar is completely dissolved.
- Microwave on high for about 6 to 7 minutes or until color changes to honey- gold.
- Immediately pour caramel into ramekins or small round molds.
- In a medium- sized bowl, combine the eggs, the coconut milk, the evaporated milk, and the condensed milk.
- Gently stir until well- blended.
- With a cheesecloth, strain egg- milk mixture.
- Pour strained mixture into prepared ramekins or small round molds.
- Cover ramekins or small round molds with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath).
- Bake in the oven at 375 F or 190 C for about 40 to 45 minutes or until toothpick inserted in the middle of flan comes out clean.
- Remove from oven, allow to cool and refrigerate to completely set.
- When ready to serve, turn flan over on a serving plate, ending with caramel on top. Top with optional coconut flakes. Enjoy!
