Chicken Tocino Recipe

INGREDIENTS:

  • 2 lbs chicken thighs, boneless and skinless
  • 1 cup pineapple juice
  • ¼ cup banana ketchup
  • water
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • ½ cup sugar
  • 2 tbsp oil

HOW TO COOK:

  1. Combine the chicken thighs, pineapple juice, ketchup, salt, garlic powder, and sugar in a bowl.
  2. Massage meat with the mixture until well- distributed and evenly colored.
  3. Store in a covered container or ziplock bag and refrigerate overnight.
  4. Add- in the marinated chicken thighs (including marinade) and enough water to cover, in a pan
  5. Cook over medium heat and bring to a boil.
  6. Lower heat, cover and simmer until meat is tender and cooked through (add more water, in ½ cup increments, if needed).
  7. When water is completely absorbed and meat is tender, add the oil.
  8. Cook, stirring regularly, until meat caramelizes.
  9. Remove from heat and serve hot. Enjoy!
