INGREDIENTS:
- 2 lbs chicken thighs, boneless and skinless
- 1 cup pineapple juice
- ¼ cup banana ketchup
- water
- 1 tbsp garlic powder
- 1 tbsp salt
- ½ cup sugar
- 2 tbsp oil
HOW TO COOK:
- Combine the chicken thighs, pineapple juice, ketchup, salt, garlic powder, and sugar in a bowl.
- Massage meat with the mixture until well- distributed and evenly colored.
- Store in a covered container or ziplock bag and refrigerate overnight.
- Add- in the marinated chicken thighs (including marinade) and enough water to cover, in a pan
- Cook over medium heat and bring to a boil.
- Lower heat, cover and simmer until meat is tender and cooked through (add more water, in ½ cup increments, if needed).
- When water is completely absorbed and meat is tender, add the oil.
- Cook, stirring regularly, until meat caramelizes.
- Remove from heat and serve hot. Enjoy!
