INGREDIENTS:
- 3 lbs boneless, skinless chicken thighs
- ½ cup soy sauce
- juice of 2 lemons
- 1 head garlic, peeled and minced
- 2 tbsp brown sugar
- ½ tsp salt
- ¼ tsp ground pepper
- 2 tbsp cooking oil
HOW TO COOK:
- Make a marinade by combining the soy sauce, lemon juice, garlic, sugar, salt, and pepper in a bowl.
- Stir until sugar and salt are dissolved.
- Add the chicken thighs and massage to fully coat with the marinade.
- Keep overnight in the refrigerator.
- Drain meat from marinade.
- Pour and heat 1 tbsp of the cooking oil in a wide pan, over medium heat.
- Add the marinated chicken thighs in a single layer and cook.
- Turn on sides, for about 10 to 15 minutes or until liquid is almost absorbed.
- Add another 1 tbsp of oil and continue to cook, turning as needed, until meat is lightly browned.
- Remove from pan and cut into serving portions. Serve hot. Enjoy!
