INGREDIENTS:
- 10 oz cooked chicken breast, diced
- 1 lb smoked kielbasa sausage, sliced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup to 1 cup tomato sauce
- 3 cups chicken broth
- 1/4 cup tapioca flour, for thickening (dissolved in 1/4 cup water)
- 1 medium onion, diced
- 3 to 4 celery stalks, sliced
- 1 large green pepper, diced
- 1 tsp salt
- 1 tbsp paprika
- 1 tsp cumin
- 1/2 to 1 tsp cayenne pepper, to taste
- 2 tbsp cooking oil
HOW TO COOK:
- Pour oil on a large pan and heat over medium- high heat.
- Saute the onion, celery, and green pepper, cook for about 5 minutes or until vegetables are soft.
- Add- in the sausage, chicken breast, salt, paprika, cumin, cayenne pepper, tomatoes, tomato sauce, and broth and mix together.
- Bring to a simmer then turn the heat to low.
- Add the tapioca flour thickener.
- Cover and continue to simmer for about 30 minutes.
- Taste and add salt if needed.
- Remove from heat and transfer to a serving plate. Enjoy!
