Chicken Bistek Recipe

INGREDIENTS:

  • 3 lbs chicken, cut into serving parts
  • 2 tbsp liver spread
  • ¼ cup soy sauce
  • Juice of 2 lemons
  • 1 cup water
  • 1 medium onion, peeled and sliced
  • 4 to 5 cloves garlic, peeled and minced
  • 3 to 4 peppercorns, cracked
  • salt, to taste
  • 1 tbsp cooking oil
  • Onion rings for garnish

HOW TO COOK:

  1. Start by washing the chicken and drain it well.
  2. Combine the chicken, onions, garlic, peppercorns, lemon juice, and soy sauce in a bowl.
  3. Mix and massage then marinate the chicken in the refrigerator for about 1 hour.
  4. Drain the chicken and squeeze excess liquid (reserve the marinade and aromatics).
  5. Pour the oil in a wok and apply medium heat.
  6. Add the chicken and reserved onions and garlic from the marinade.
  7. Cook, stirring regularly, for about 7 to 10 minutes or until chicken is lightly browned and juices run clear.
  8. Add the reserved marinade and the water and bring to a boil.
  9. Lower heat, cover, and continue to cook for about 30 to 40 minutes or until chicken is cooked through and sauce is reduced.
  10. Add the liver spread and stir to dissolve.
  11. Cook for about 3 to 5 minutes or until sauce is thickened.
  12. Season with salt to taste.
  13. Remove from heat and garnish with sliced onion rings. Enjoy!
