INGREDIENTS:
- 3 lbs beef shank (bulalo)
For boiling:
- 1 tsp salt
- ½ tsp ground black pepper
- 6 cups water
- 1 yellow onion, wedged
For sauteeing:
- 1 yellow onion, minced
- 4 cloves garlic, crushed
- 1 thumb ginger, minced
- 4 tbsp brown sugar
- 5 pcs star anise
- 3 tbsp cooking oil
- 4 tbsp soy sauce
HOW TO COOK:
- Pour water into a pressure cooker and let it boil.
- Add- in the wedged onion, ground black pepper, and salt.
- Add- in the beef shank in the pressure cooker then cover and pressure cook for 20 to 30 minutes.
- Remove the beef shank and set the beef stock aside.
- Pour and heat the cooking oil in a clean pot.
- Saute the garlic, onion, and ginger.
- Add- in the boiled beef shank and cook for 1 minute.
- Add- in the soy sauce and 1 & ¾ cups of the beef stock into the pot then let it boil.
- Cover and then cook in medium heat for 8 minutes.
- Add- in star anise then cook for 12 minutes.
- Remove the star anise from the pot.
- Add- in the brown sugar, stir, then cook for 3 to 5 minutes.
- Add- in salt and ground black pepper to taste.
- Transfer to a serving bowl. You may serve with garlic fried rice and egg, enjoy!
