Bulalo Pares Recipe

INGREDIENTS:

  • 3 lbs beef shank (bulalo)
For boiling:
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 6 cups water
  • 1 yellow onion, wedged
For sauteeing:
  • 1 yellow onion, minced
  • 4 cloves garlic, crushed
  • 1 thumb ginger, minced
  • 4 tbsp brown sugar
  • 5 pcs star anise
  • 3 tbsp cooking oil
  • 4 tbsp soy sauce

HOW TO COOK:

  1. Pour water into a pressure cooker and let it boil.
  2. Add- in the wedged onion, ground black pepper, and salt.
  3. Add- in the beef shank in the pressure cooker then cover and pressure cook for 20 to 30 minutes.
  4. Remove the beef shank and set the beef stock aside.
  5. Pour and heat the cooking oil in a clean pot.
  6. Saute the garlic, onion, and ginger.
  7. Add- in the boiled beef shank and cook for 1 minute.
  8. Add- in the soy sauce and 1 & ¾ cups of the beef stock into the pot then let it boil.
  9. Cover and then cook in medium heat for 8 minutes.
  10. Add- in star anise then cook for 12 minutes.
  11. Remove the star anise from the pot.
  12. Add- in the brown sugar, stir, then cook for 3 to 5 minutes.
  13. Add- in salt and ground black pepper to taste.
  14. Transfer to a serving bowl. You may serve with garlic fried rice and egg, enjoy!
