INGREDIENTS:
- 2 cups glutinous rice flour
- Butter
- Water
- Banana leaves (for wrapping)
- Fresh mangoes, sliced (for sides)
For the Sauce:
- 1 can coconut milk
- 1 cup brown sugar
- Water
HOW TO MAKE:
- Pour- in the glutinous rice flour in a large mixing bowl.
- Pour- in some water, little by little, to form a thick mass.
- Knead to form a ball.
- Divide the dough into smaller ping pong sized balls.
- Roll the small balls to form oval shapes and flatten between the palms of your hands.
- Spread some butter on the banana leaves.
- Wrap each piece of the dough with banana leaves and place in a steamer.
- Steam for about 20 minutes or until cooked.
- Remove from steamer and serve with the latik sauce and fresh mangoes. Enjoy!
For the Sauce:
- Pour the whole can of coconut milk in a thick saucepan.
- Heat and bring it to boil then continue to stir until most of the liquid has evaporated.
- The milk will begin to change its color to slight brown and begin to solidify.
- At this point add- in the brown sugar.
- Continue to stir until the sugar caramelizes.
- Once the sugar has caramelized, add some water and let it simmer to form a thick sauce.
- Pour over the cooked binallay.
