INGREDIENTS:
- 2 cups coconut milk
- 2 cups rice flour
- 2 tbsp baking powder
- 4 eggs, well beaten
- ¼ cup melted margarine
- 1 cup sugar
- ½ tsp salt
- ¼ cup sugar (for topping)
- ¼ cup coconut cream (for topping)
HOW TO COOK:
- In a mixing bowl, combine sugar and beaten eggs.
- In a separate bowl, combine salt and rice flour then add this to the egg mixture.
- Add- in melted margarine, coconut milk, and baking powder to the egg mixture.
- Prepare 3 large round molds by lining them with banana leaves.
- Pour mixture equally into the molds.
- Bake in 375 F or 190 C oven.
- When half- done, take it out from the oven and brush top with coconut cream and sugar.
- Continue to bake until golden crust is formed.
- Once done, allow to cool before serving. Share and enjoy!
