Beef Bicol Express Recipe

INGREDIENTS:

  • 2 lbs beef chuck, cubed
  • 2 cups coconut milk
  • ⅓ cup bagoong
  • 4 to 6 pieces siling labuyo, sliced diagonally (adjust to level of desired spiciness)
  • 1 tbsp ginger, minced
  • 4 cloves garlic, crushed
  • 1 medium yellow onion, sliced
  • Salt and pepper, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat the cooking oil in a pan.
  2. Sauté the garlic, ginger, and onion.
  3. Once the onion becomes soft, add the bagoong and stir.
  4. Put- in the beef then cook for 3 to 5 minutes or until medium brown.
  5. Pour- in the coconut milk then stir.
  6. Add- in the sili and bring the mixture to a boil.
  7. Simmer for 40 minutes or until the beef is tender (add water if needed).
  8. Sprinkle some salt and pepper to taste then stir.
  9. Cook for another 3 minutes.
  10. Remove from heat and transfer to a serving plate. Enjoy!
